...I can't stop eating the baby food, thanks to this wonderful cookbook.
My good friend, Erin turned me on to it and after checking it out from the library, repeatedly, my parents gave it to me for Christmas! It provides all kinds of tips on yummy food combinations as well as training on the basics of making your own baby food for babies up thru 4-5 years! One of my favorite parts is all of the amazing pictures. It never fails to inspire me to try and make meal times interesting. Sadly, having two kids rendered me much busier, so I'm having to be much more intentional about actually making it. Hopefully, Erin and I (and whoever else wants to join us) will be getting together soon to prepare several recipes at once so we can have them frozen and ready to go!
Today, I made Tomato and Cauliflower Gratin. It was so yummy that I found myself pulling out the spatula and licking the last remnents from the blender! Keegan LOVED the new meal! Xander also liked it as a spread on some crackers. I think I might even play around with the food combination and turn it into a soup for ME! Now if Rich only liked tomatoes...
In case anyone wants to try it, here's the recipe!
Tomato and Cauliflower Gratin
1 1/2 cups cauliflower florets
1 1/3 cups pealed, seeded and chopped tomatoes
2 tbs butter
1/4 c shredded chedder cheeseSteam cauliflower for 12 minutes. Meanwhile, saute tomatoes in butter until tomatoes are soft and mushy. Remove from heat and stir in cheese. Add tomato/cheese mixture and cauliflower to the blender and blend to desired consistency using water from steaming. Try not to eat it all before feeding baby. ;)

It does sound good - but Keegan looks like he is not too sure about the whole thing.....
